Pasta with asparagus and ricotta
Pasta with asparagus and ricotta is a very simple and quick dish to prepare, whoever can cook it and it’s ready in 40 minutes between preparation and cooking time. It’s made with asparagus that are one among the best of the spring season. Asparagus have a delicious and delicate taste and are rich of healthy properties and diuretic susbstances and they can be combined with so many ingredients. Combined with ricotta they have a spring fresh and light flavor.
Let’s see how to prepare this delicious dish:
Ingredients for two people
1/3 pound pasta
1 bunch asparagus
1/2 pound ricotta
extra vergin olive oil
Bring a large pot of water to a boil and add the asparagus. Cook them for about 10 minutes. Drain the asparagus and cold them with ice to mantain them green and crispy. Once cold, cut the asparagus tips and save them. Then cut the asparagus stems. Add ricotta, extra vergin olive oil, salt and pepper in the mixer and blend all the ingredients together. Taste to control the salt and blend until it becomes a kind of cream.
In a pan fry the onion, add the asparagus tips that you have saved previously. Cook the pasta in salted water. Drain the pasta directly into the pan with the onion and the asparagus tips, add the ricotta and stir well. Finally take the dish and form a layer with the cream. Put the pasta seasoned with the asparagus tips and ricotta. Add a pinch of pepper to give the finishing touch.
